Winter Squash
Cucuzza (Italian Winter Squash) Recipe?

My husband just brought in a Cucuzza squash from his garden and wants me to stuff and bake it. It is about two pounds and I have ground beef and the other ingredients to make a meatloaf type stuffing. Has anyone tried this? He also said to wrap it in bacon to hold it together after it is stuffed. Any input as to how to do this, oven temperature and how long would be appreciated. Thank you.

I’d brown some of the meat in a large skillet on the stove top, then add a chopped up onion and minced garlic until translucent. Then I’d add some Italian flavored bread crumbs and a good amount of Pecorino Romano cheese, then hollow out the squash a bit and stuff with meat, bread crumbs and cheese stuffing, drizzle lightly with Olive Oil and then wrap in Pancetta or Proscuitto and Bake at 350 degrees until the cucuzza is cooked, my guess about 1/2 hour.

Hum……..the sounds so good, I’ll have to write it down! Let me know how delicious that is, I’ll try it but probably not for a few weeks.
